so, I did.&amp;nbsp; We came downstairs in the pitch black so that we did not wake up anyone else.&amp;nbsp; Then, we sat on the sofa and snuggled (which he usually resists); and, soon he was back to sleep.&amp;nbsp; I was afraid to move and wake him; but, I got comfortable and watched him sleep until the sun and everyone else awoke.&amp;nbsp;&lt;br /&gt;&lt;br /&gt;That is one of my greatest joys...to marvel at my children sleeping...to be able to comfort them and hold them in my arms.&amp;nbsp; I was working through some things for which I did not know I had to forgive my father.&amp;nbsp; I was upset with both my parents; but, my father is the one living with me...the one in my care...the one I see every day...the one whom I have now forgiven.&lt;br /&gt;&lt;br /&gt;There was no process.&amp;nbsp; No working through it.&amp;nbsp; &lt;br /&gt;&lt;br /&gt;Some advice rattled around my head, though.&amp;nbsp; I read, "Forgiveness is about you.&amp;nbsp; It is not about them."&amp;nbsp; I know/knew my dad is/was not capable of even recognizing the need, let alone remembering the deeds (I believe that is good...now).&amp;nbsp; In case you don't remember, my dad had a stroke in 2008, which left him with very little memory of the last 30 years...and, dementia.&amp;nbsp; How could I not have already forgiven him?&amp;nbsp; I felt awful.&amp;nbsp; Then, forgiveness fell on me.&lt;br /&gt;&lt;br /&gt;I watched my dad have a "mini-stroke".&amp;nbsp; That was awful.&amp;nbsp; I was scared--not sure if it was for me or for him.&amp;nbsp; I may have been thinking, "how could I let him die without forgiving him?"&amp;nbsp; I was not conscious of those thoughts.&amp;nbsp; I was too busy yelling out to my unresponsive father that I love him...while crying...and, yelling for my husband to call the paramedics. &lt;br /&gt;&lt;br /&gt;My dad has been home for a little over a week.&amp;nbsp; There are so&amp;nbsp;many moments every day I&amp;nbsp;am so grateful to&amp;nbsp;share with my family.&lt;br /&gt;&lt;br /&gt;My husband works so much right now, we try to make it special when he comes home for lunch.&amp;nbsp; &lt;br /&gt;&lt;br /&gt;My boys&amp;nbsp;are cultivating and nourishing the most important friendship they'll ever have--with each other.&amp;nbsp; &lt;br /&gt;&lt;br /&gt;They&amp;nbsp;have&amp;nbsp;time&amp;nbsp;to learn&amp;nbsp;about their interests, too.&amp;nbsp; My oldest is taking piano lessons during the day, when he is most receptive.&amp;nbsp; &lt;br /&gt;&lt;br /&gt;It&amp;nbsp;is a joy teaching&amp;nbsp;my oldest&amp;nbsp;how to read and helping him practice writing, exploring his creativity, nurturing his imagination.&amp;nbsp; We try to speak Spanish one day/week at home--we are all learning (except my fluent husband, of course!).&lt;br /&gt;&lt;br /&gt;We get to go on field trips.&amp;nbsp; We get to explore nature, our world.&amp;nbsp; We plan to travel as often as we can--especially to Mexico.&amp;nbsp; Hopefully, someday to Poland, Germany and Ireland--my heritage.&amp;nbsp; &lt;br /&gt;&lt;br /&gt;I feel good about homeschooling every day.&amp;nbsp; I have often felt it is hardest to forgive myself for mistakes, misgivings and wrongdoings.&amp;nbsp; But, right now, I am struggling with forgiving a family member for things I did not even know still hurt.&lt;br /&gt;&lt;br /&gt;During this process, I am not being very nice or respectful.&amp;nbsp; And, I am in a cycle.&amp;nbsp; Not stuck, exactly...but, I am finding it hard to forgive myself for how I am treating this person right now because of the things they did long ago (that I am still working to forgive and FORGET!).&amp;nbsp; Forgetting is really the key.&amp;nbsp; You can't truly forgive, until you forget, I have found.&amp;nbsp; You can't forget until you work through and come to terms with all the feelings you have!&lt;br /&gt;&lt;br /&gt;I am grateful to be on this journey with some support.&amp;nbsp; I have my church that provides a community that explores all kinds of questions, answers and hypotheses.&amp;nbsp; I have my husband.&amp;nbsp; I have my friends that listen.&amp;nbsp; I have my sister.&amp;nbsp; It did not seem hard while we were doing it; but, with my dad living with us since July, we are so grateful to have two cars again.&amp;nbsp; We are most grateful to have friends that offered to sell us their used car.&amp;nbsp; It has worked out well.&lt;br /&gt;&lt;br /&gt;We had also been a one-ipod family for a few years now.&amp;nbsp; But, our second CD player broke and I could not listen to any of my music without a lot of hassle.&amp;nbsp; So, we now have 2 ipods, too.&amp;nbsp; And, I love having my music on my own ipod!&lt;br /&gt;&lt;br /&gt;We still have just one computer, though...and, that takes some juggling (with my husband who often uses it for work, with my kids who are becoming more computer literate, and with my household needs and desire to write).&amp;nbsp; Einstein's quote is my inspiration for homeschooling.&lt;br /&gt;&lt;br /&gt;My 5-year-old just went through an intense period of learning (because he wanted to learn everything he could and did so voraciously)&amp;nbsp;about all the planets in the solar system.&amp;nbsp; He also "discovered" the "Magic Planet" and the country, "Bigland", in his imagination.&amp;nbsp; I have encouraged him to start a journal with all of his amazing stories about this planet (and, I wish I had written more of his awesome stories down in the moment!).&lt;br /&gt;&lt;br /&gt;He is still writing about "his" planet, the "10th" one, farther than Pluto, but bigger than even Jupiter.&amp;nbsp; I am nearly convinced it really exists!&amp;nbsp; But, his "new" interest is the human body.&amp;nbsp; He loves reading about ailments and diseases and now he is trying to figure out how everything works.&amp;nbsp; Here are some of the things my life/immediate family includes:  incarcerated family member (at one time), homeless family member (at one time), drug-addicted family member, poverty, estranged family member/s, divorced parents and grandparents, depression, violence, police.  And, that just scratches the surface.&lt;br /&gt;&lt;br /&gt;People are grateful to hear these things about my life because they have stuff, too!&lt;br /&gt;&lt;br /&gt;I am grateful to have come to a place in my life where I am not ashamed of the things that make up my life. We bought it because the much older faucet was not repairable and we did not want to buy a really nice one because we still have to replace our sink (and our cabinets, wall and floor...sigh...did I mention our house was built in the 1890s and stood empty for 40ish years?). Anyway, the faucet was totally not worth it. The time fixing it could have been spent on more industrious pursuits! Had we purchased a better quality one, we would not have to spend time repairing it. OR, if we had more money, we could hire a plumber...or a professional to redo our kitchen, HELLO! Imagine!&lt;br /&gt;&lt;br /&gt;Along the same lines, we have a very old bathroom (everything needs to be replaced, including the plumbing and the plaster...even parts of the outside walls!) and a very new bathroom (that my husband and I are near finishing after starting it when I was pregnant with our first). And, I spend a total of 10 minutes cleaning the new bathroom from top to bottom (tile, floor, bathtub, sink, toilet) every other week or so (with touch-ups in between). But, I spend 25 minutes cleaning the old bathroom every week, scrubbing the tub and it still doesn't look clean (and, there is no tile because the tub sits in front of a window...and, right now, there isn't even a sink!). Ugh.&lt;br /&gt;&lt;br /&gt;We don't want or need luxury items--just simple, nice-looking, good quality (i.e. well-made) products that aren't made to fall apart! But, I don't feel like the people teaching me are wrong. I just don't agree with them. I respect and honor their interpretations of His word. I also find them intriguing and seek to understand why that is what they believe.&lt;br /&gt;&lt;br /&gt;I have intelligent, deeply spiritual friends who do not believe in God. That is what they believe; so, I don't think they are wrong. This doesn't even make sense to me as I write it. But, this is how I feel. I don't believe anyone who listens to their heart to find their way through this world can be wrong. &lt;br /&gt;&lt;br /&gt;Having said that, I don't believe in violence; so, when someone believes there is a God who wants them to hurt or kill someone, I think they are wrong. This is the only exception I have.&lt;br /&gt;&lt;br /&gt;I believe God resides within every one of us. I believe he is all around us--omniscient, omnipresent. I believe he is always waiting for us to listen to Him. I believe he reveals Himself in loving acts, and of course, in miracles. I believe He loves us unconditionally. I believe He created the earth for us to live for all eternity (I don't believe that I will live forever; but, people and animals and nature will, through constant change and renewal). I believe He made everything and everyone to live and to die, for that is the only way we can live on earth for all eternity...to die...to renew. Dirt to dirt. Dust to dust. &lt;br /&gt;&lt;br /&gt;I don't believe anyone has been "chosen". I believe God created every one of us as equals. Every person is important and loved by Him, no matter what...no matter what we believe (even the ones who believe He would want them to hurt someone). Go ahead, disagree. I don't remember him ever saying anything else. Or, maybe it was just because people were momentarily silenced contemplating the meaning of his answer...and, I noticed and remembered that. Not sure.&lt;br /&gt;&lt;br /&gt;What I do know is even though "fair to middlin" generally means "mediocre" or "so-so" (I think he said that, too!), I miss it. I miss the dad I remember. Now, all I get is a "good" or "pretty good". That's good, I guess. But, from my German and Irish dad who always used to say "goodnight" or "goodbye" in many languages, I miss it. (tears are shedding)&lt;br /&gt;&lt;br /&gt;My dad has lived with us for nearly four months now and I have only gotten two variations, one "arrivederci (goodbye)" and one "buenas noches (goodnight)".&lt;br /&gt;&lt;br /&gt;For those of you who do not know, my dad had a stroke in November 2008 (at that time, I was pregnant with my youngest). He has gained back almost 100% of his physical abilities; but, he has stroke-induced dementia symptoms. So, the dad I know is not often fully present and his short term memory is very poor. But, being here with us, he seems to be doing better and we are able to care for him better (than when he was living in assisted living). For that, I am grateful. In the wake of a friend's inspiring wedding and in contemplation of our present and where our life (and our family) is now, I took out our wedding vows. I love the words we wrote and promised to each other on our wedding day and I am happy to share them (they still pass muster!).&lt;br /&gt;&lt;br /&gt;Today, as we become one, I vow to walk with you&lt;br /&gt;through the journey of life and support you&lt;br /&gt;through all of our sorrows, all of our joys,&lt;br /&gt;all of our failures and all of our triumphs.&lt;br /&gt;&lt;br /&gt;My heart will be your shelter&lt;br /&gt;in times of pain or sadness.&lt;br /&gt;My arms will hold you tight and&lt;br /&gt;never let you fall.&lt;br /&gt;&lt;br /&gt;I vow to provide you with the warmth that I feel&lt;br /&gt;when you smile--the warmth that shines from&lt;br /&gt;your heart and through your eyes.&lt;br /&gt;&lt;br /&gt;I vow to always strive to rediscover you as our&lt;br /&gt;love changes and as we change as individuals.&lt;br /&gt;In doing so, I vow to always seek to understand&lt;br /&gt;you through words of truth and love.&lt;br /&gt;&lt;br /&gt;On this day, I give you all of me,&lt;br /&gt;I open my heart and my mind to you.&lt;br /&gt;I vow to help you to be your best and&lt;br /&gt;to give my best to you.&lt;br /&gt;&lt;br /&gt;I vow to be faithful to you all the days of my life.&lt;br /&gt;&lt;br /&gt;You are the love of my life and my best friend.&lt;br /&gt;Today, it is my solemn vow to fulfill our destiny&lt;br /&gt;and love and care for you for all eternity.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;The theme for our wedding was, "love grows." So, each time I have a moment to do something, I have to stop and ask myself, "what do I most want to do right now?" and, "what will make me the happiest?" I have been making an effort to do this (not always, but I try) the past couple of months and it really helps me to be more accepting of the things I can not get to.&lt;br /&gt;&lt;br /&gt;I used to think I was pretty good at prioritizing tasks...but, not with two young boys, my father, my husband and my home to tend. Our health and happiness are the two most important things to me; so, most of the time my choices are to that end. &lt;br /&gt;&lt;br /&gt;I have surprised myself sometimes, too. I missed my home. It seemed foreign when we came in the door after being away from our responsibilities for a week in Door County. I loved spending time with my husband and my sons without a clock to check or a schedule to worry about. We just loved being together.&lt;br /&gt;&lt;br /&gt;We are grateful to our nephew for caring for my father in our stead. We are grateful to my sister and her fiancee for staying with our boys in Milwaukee while we attended a friend's wedding there at the end of our week. We are grateful for so many things.&lt;br /&gt;&lt;br /&gt;Before we left, I gave my 5-year-old an assignment, "write 10 things you would like to do on vacation". I am still impressed with what he wrote. I am back to baking most things instead of buying pre-packaged gluten-free waffles, bread and more. I missed it. I don't know what kept me away...maybe it seemed too probable that making my own bread could cost more than the $5/loaf for gluten-free bread (because of the high cost of the gluten-free ingredients)...but, I was wrong! Thankfully wrong!&lt;br /&gt;&lt;br /&gt;I don't know why I did not think to reopen my "Healthy Bread in Five Minutes a Day" cookbook to check out the gluten-free section. But, I finally did. I can make 2-4 loaves of bread, pizza crust, crackers--even cinnamon rolls--from one batch of my gluten-free dough! It tastes good. It is healthy. I am grateful. But, I still need to try those cinnamon rolls!&lt;br /&gt;&lt;br /&gt;And, the bigger news on this update is that my whole household is now eating primarily gluten-free and noticing (and enjoying!) the benefits of doing so! My husband told me when he has a sandwich now, he notices the dip in his energy, more like afternoon fatigue (even with whole grain bread!).&lt;br /&gt;&lt;br /&gt;The next thing I am inspired to make (from a recipe I saw at, &lt;a href="http://glutenfreegoddess.blogspot.com/2011/08/gluten-free-chocolate-chip-zucchini.html"&gt;http://glutenfreegoddess.blogspot.com/2011/08/gluten-free-chocolate-chip-zucchini.html&lt;/a&gt;) is gluten-free zucchini brownies! After a long bout of illness last fall (we all had a form of pneumonia/bronchitis that lasted about 2 months as it ran through our family), I decided that we did not wash our hands enough. We were letting too many germs in our house.&lt;br /&gt;&lt;br /&gt;So, now we wash our hands:&lt;br /&gt;when we come into the house from outside;&lt;br /&gt;when we use the bathroom;&lt;br /&gt;before and after we eat (always at home and ESPECIALLY when at restaurants);&lt;br /&gt;and, any time we think we may have; but, can't really remember.&lt;br /&gt;&lt;br /&gt;We also make a conscious effort to:&lt;br /&gt;cough into our elbows (preventing germs from spreading to/from our hands);&lt;br /&gt;avoid touching our eyes, nose and mouth with our hands (we use our shirt if necessary);&lt;br /&gt;and, we use sanitizer if there is no place to wash our hands.&lt;br /&gt;&lt;br /&gt;We also lather our hands "long enough to get the germs off" (20 seconds by medical standards) and then rinse.&lt;br /&gt;&lt;br /&gt;Of course, at first (and sometimes still), it was a "pain"; but, once my husband bought into it and saw the benefit of this simple action, it keeps getting easier!&lt;br /&gt;&lt;br /&gt;I am grateful that since we started our new (even more frequent!) handwashing regimen, that we have not been sick very often (I can't remember the last time)! I know we will still get sick; but, we are trying harder not to and that feels good! He then thinks of a million things he can "play" in nature. It is beautiful. I love the things that my children think and say. They amaze me every day.&lt;br /&gt;&lt;br /&gt;In his words, here are some of the reasons "God's earth is like a toy":&lt;br /&gt;&lt;br /&gt;there are fresh berries we can pick and eat&lt;br /&gt;we can use rocks like chalk&lt;br /&gt;there are trees and bushes to climb&lt;br /&gt;mud is like glue&lt;br /&gt;there are sidewalks to draw on like my easel&lt;br /&gt;we can find pictures in the clouds&lt;br /&gt;mud is a home for animals in the ground for us to find&lt;br /&gt;we can swim in the water&lt;br /&gt;we can climb the rocks and jump off&lt;br /&gt;we can make castles in the sand&lt;br /&gt;there are flowers to pick&lt;br /&gt;there are plants and trees to get the bugs from (lately, cicada skins)&lt;br /&gt;&lt;br /&gt;My 2-year-old always reminds us, "We forgot to pray!" So, "Dear God, for all these things, we are grateful. We love you. I felt awkward enough, why talk about my beliefs that probably differed from everyone else's? However, I relished the opportunities I had to talk about the Bible and God with my congregation (at the time). Then, an unfortunate series of events took me far away from the church and faith in which I was raised.&lt;br /&gt;&lt;br /&gt;During my teenage years, I accompanied my mother and friends to different houses of worship, only to realize that the teachings were so similar and the people just as wonderful (as in my former congregation) in every single one. That left me questioning everything I had ever learned.&lt;br /&gt;&lt;br /&gt;Today, when I have the opportunity to discuss God with friends, I have quite a lot to say. I still have a lot of questions; but, I feel strongly about my beliefs and I am comfortable openly discussing them. I feel spiritually grounded and for that, I am grateful. It has been quite a journey.&lt;br /&gt;&lt;br /&gt;I realized recently when I told a friend "not to leave God out of his work", that I had not even included Him in my blog. That ends today. But, she had a recipe that I was finally able to replicate...they were so good, I had to! The only waffles that have come close to these (that I have not been able to make gluten-free) was a recipe from my sister-in-law, using a sourdough starter. I found a recipe for "Norwegian Sour Cream Waffles" that was close to my mom's, added my gluten-free ingredients and, voila!&lt;br /&gt;&lt;br /&gt;This morning, for the first time since going gluten-free, I made waffles for my family.&lt;br /&gt;&lt;br /&gt;Gluten-Free Norwegian Waffles&lt;br /&gt;&lt;br /&gt;5 eggs&lt;br /&gt;1/2 c. sugar&lt;br /&gt;1 1/2 c. gluten free flour blend (I use 2 parts organic brown rice flour and 1 part tapioca flour)&lt;br /&gt;1 t. ground cardamom or ginger or lemon zest (I used cardamom for the first time ever this morning; but, my mom's way is with lemon zest...I love them both!)&lt;br /&gt;1 c. sour cream (this morning, I had some part-skim ricotta I need to use up...worked great!)&lt;br /&gt;4 T. unsalted butter, melted&lt;br /&gt;&lt;br /&gt;Beat the eggs and sugar together for 5-10 minutes (I throw it in my stand mixer and wait until they are super-frothy and thick). With a rubber spatula, fold in half the flour, cardamom (or ginger or lemon zest) and sour cream (or ricotta cheese), and then the remaining flour/s.. Lightly stir in the melted butter and set the batter aside for 10 minutes. Heat waffle iron. Pour about 3/4 c. of the batter in the center (I used the belgian waffle side this morning because I did not feel like turning them around) and close the lid to cook for 5 minutes. Serve with jam (they suggested lingonberry in the recipe; but, we used strawberry jam that was just sweetened with fruit juice). I always have a list, whether I am going to the grocery store, the mall or downtown.&lt;br /&gt;&lt;br /&gt;There once was a time when I would just "go shopping", spending my hard-earned money (all of it, I might add) on things I thought were "cute" or "cool" or "a good deal".&lt;br /&gt;&lt;br /&gt;I cannot pinpoint exactly the moment that I made a change to more purposeful, more conscious (in many ways!) shopping. I feel like it started before I got married; and, it must've been a gradual process. It could have been when we started shopping for furniture. It could have been that I began to have more important things to do and think about!&lt;br /&gt;&lt;br /&gt;Also, the year we were married, we were both laid off from our jobs, we moved from Chicago to a small town (Ottawa, IL) and we bought a house. Did I mention it was the year we were married? So, juggling our wedding budget (we paid for it all ourselves), our budget for buying a house, getting appliances, and making sure we had enough to live on (and still getaway for our honeymoon) may have inspired me to do more mindful shopping. I was (and am) not only concerned about the cost and the appearance of things, but also the impact on the environment. Research, research, research. Hello, mindful shopping.&lt;br /&gt;&lt;br /&gt;Next came tracking our expenses in order to be more mindful of EVERYTHING. After tracking our expenses for a few months, I put together a household budget. I still track ALL of our expenses. I know exactly when grocery prices go up because little pennies add up to big dollars each month; so, I have to constantly figure out where to cut back. Now that we have kids, being mindful has become even more important.&lt;br /&gt;&lt;br /&gt;There are not only changes in prices, but in how things are made. I continue to check ingredient lists, consumer research sites and environmental sites to make sure the things I like are still the same quality. It feels good to buy the things I need and like and to stay within our budget. Try it!&lt;br /&gt;P.S. I still go "window shopping", whether online or on the street. The other reason is to make a difference. Every choice I make at the store is a vote for what I, the consumer, want; and, therefore, what they, the companies, should be selling (sometimes, more important is also, "how" the food is raised/products are made--fair wages, ethical, etc.).&lt;br /&gt;&lt;br /&gt;I went to our local butcher shop because I heard they get their pork from a small farm in Wisconsin. I heard wrong. I am so surprised that the owners of this great butcher shop know everything about their meat except the farm on which it was raised. To me, that would be the ultimate piece of information. To know the source. To know the animals are treated humanely. To know what they are fed. That is how you know your meat!&lt;br /&gt;&lt;br /&gt;I have a friend who raises cows. Guess where I get my beef? Does anyone know a pig farmer? I also know where my chickens are raised. I buy wild salmon and responsibly farmed tilapia fish (mainly). I get the most amazing eggs from a friend of a friend's free-range chickens! I love buying things straight from the source at the local farmers' market (I had the good fortune of setting the standards for the market and I know the farmers and which ones use pesticides and which ones do not, as it takes much time and money to be certified organic!).&lt;br /&gt;&lt;br /&gt;Everyone of us wields a very powerful thing called INFLUENCE. You have the power to make a difference today--choose wisely! Find out where and how your food is grown. Find out if the products you buy are responsibly produced. If you find out something negative about a company or product, then find a company you do like and buy their products instead! Make a DIFFERENCE! Let's create a new "norm"--fair wages, fair labor practices, ethical standards, natural products, and much, much more to make our world a little better each day! (I really did/do eat well...I just also love to treat myself!) Having previously avoided many pre-packaged foods (in favor of homemade), there are a few gluten-free "treats" I have come to enjoy!&lt;br /&gt;&lt;br /&gt;For example, this morning my family and I tried &lt;strong&gt;Kinnikinick Gluten-Free Donuts, Cinnamon Sugar&lt;/strong&gt; (in the freezer section). They were delicious! Just the tiniest difference from the "real thing".&lt;br /&gt;&lt;br /&gt;I also finally found a bread that I love! I mean it! In the gluten-free section at a nearby Jewel, I found &lt;strong&gt;Schar Gluten-Free Sourdough Bread&lt;/strong&gt;. This bread is made in Europe and the company has been making gluten-free products for decades; so, practice must make (almost) perfect! Please note that I have so far only made grilled cheese; but the flavor and texture far surpass any other gluten-free breads we have tried. Toasting or grilling gluten-free breads is probably going to give you the best results.&lt;br /&gt;&lt;br /&gt;My whole family also loves &lt;strong&gt;Udi's Gluten-Free Pizza Crust.&lt;/strong&gt; I just found some in the "soon to expire" bin at our grocery store and I was even more excited to pay half price! These range from $4.99 to $6.99 for 2 single-serve (double for us) pizza crusts; but, they are delicious and still less than a restaurant, which I can't eat anymore anyway.&lt;br /&gt;&lt;br /&gt;What I have found (from being in the practice of always reading ingredient lists) is most gluten-free products are also made with wholesome, healthy ingredients and very few (rarely any) preservatives. You would never know they are gluten-free! I modified a recipe from the blog, &lt;a href="http://iamglutenfree.blogspot.com/"&gt;http://iamglutenfree.blogspot.com&lt;/a&gt;. The blogger got her recipe from the cookbook, "Gluten-Free Baking Classics", by Annalise Roberts. I have made these a couple of times and I found it was very easy to make substitutions! Enjoy my version or yours!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Heavenly Blueberry Muffins&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;2 c. brown rice flour mix (I used 1 part tapioca flour to 2 parts brown rice flour; but, the original author/chef recommended 2 c. brown rice flour, 2/3 c. potato starch and 1/3 c. tapioca flour)&lt;br /&gt;&lt;br /&gt;2/3 c. sugar&lt;br /&gt;1 T. baking powder&lt;br /&gt;1 t. baking soda&lt;br /&gt;3/4 t. xanthan gum&lt;br /&gt;1/4 t. sea salt&lt;br /&gt;1/4 t. nutmeg&lt;br /&gt;1 1/2 c. unsweetened blueberries (I used frozen organic blueberries)&lt;br /&gt;1/2 c. milk (I have used coconut milk and regular milk; the blogger used vanilla almond milk)&lt;br /&gt;1/2 c. canola oil (I prefer melted coconut oil. I have also used melted unsalted butter)&lt;br /&gt;2 large eggs&lt;br /&gt;1/2 t. vanilla extract&lt;br /&gt;&lt;br /&gt;Streusel Topping&lt;br /&gt;1/2 c. brown rice flour mix (see above)&lt;br /&gt;1/3 c. brown sugar&lt;br /&gt;1/2 t. cinnamon&lt;br /&gt;1/4 t. xanthan gum&lt;br /&gt;3 T. unsalted butter, melted (I want to try coconut oil, but I haven't yet)&lt;br /&gt;&lt;br /&gt;Preheat oven to 375 degrees. Position rack in center of oven. Grease muffin tins.&lt;br /&gt;&lt;br /&gt;Mix flour, sugar, baking powder, baking soda, xanthan gum, salt and nutmeg in large mixing bowl. Add blueberries and stir to coat evenly.&lt;br /&gt;&lt;br /&gt;Combine milk and oil/butter in a small bowl; remove 1 T. of combined liquid and discard it (I did not do this the second time and it was totallly fine). Beat in eggs and vanilla. Add liquids to blueberry mixture and stir until just blended. &lt;br /&gt;&lt;br /&gt;Fill muffin pans 2/3 full. Sprinkle with streusel topping. Bake 18-25 minutes until lightly golden (and spring back from touch). Remove muffins from pan and serve or cool on rack. Just one. My husband uses it a lot for work, even taking it with him to his office at times. I use it for our household needs and for fun.&lt;br /&gt;&lt;br /&gt;Our computer serves as a source of entertainment because we also don't have cable television. So, we watch hulu.com or network websites to catch up on our favorite shows. There have been a few times when I have felt frustrated because I want or need the computer when my husband needs it. But, thankfully, those times are few and far between.&lt;br /&gt;&lt;br /&gt;Last November, we sold our old second car. We knew it still had a lot of life left in it (to be able to sell it) and we also knew that we would not be using it much in the winter, as we were away in Mexico for a month. So, we went down to one car at that time. Did I mention we do not have any public transportation to speak of in Ottawa, IL (I think a Trailways bus comes through a couple of times a day)? So, this seemed harder than it actually is turning out to be. &lt;br /&gt;&lt;br /&gt;I actually (most of the time) ENJOY only having one car. I enjoy not having to maintain two cars, keeping track of stickers, oil changes, even gas! I do wish that our car was more fuel efficient; but, we do need the space (in our Honda Pilot) for the third row for the car seats and my dad and his walker! Having one car does enable us to be more efficient overall-we combine trips and errands whenever we can. We also have become more active as my youngest is approaching 2 years old-we ride our bicycles around town more and my husband even jogs home from the office when we have the car!&lt;br /&gt;&lt;br /&gt;I'd say that having one computer has taught us to better manage our time and to share (yes, even us grown-ups need some lessons every now and again) and that having one car has enabled us to be healthier and more efficient! Because, as the article points out, our government does not require testing on personal care products. So, companies can label their products, "natural" or "hypo-allergenic" or anything else that appeals to consumers so they can sell their product. When we returned, they had both learned some phrases that stuck.&lt;br /&gt;&lt;br /&gt;My 22-month-old knows that "Gracias" and "De nada" are "Thank you" and "Your welcome"; so, when I say "Thank you", he says, "Gracias".  His favorite phrase right now is, "No, Gracias".   So, when I say, "Sweetie, Do you want some cereal?", his response is, "No, Gracias". &lt;br /&gt;&lt;br /&gt;I don't recall actually saying that phrase.  I have often said, "No, Thank you"...but, I think it is cool that he learned to say it in Spanish.  He also loves to say, "Buenas noches" (good night).&lt;br /&gt;&lt;br /&gt;My boys both bonded with their grandparents (and cousins and aunts and uncles) in Mexico.  But, there were moments when my Spanish-speaking in laws and my 22-month-old clearly understood each other. I have tried a couple of different varieties.   Let me just say I need to remember to do due diligence and continue to check ingredients!  Some "gluten free" pastas have ingredients I try to avoid--namely, mono and di-glycerides and high fructose corn syrup!&lt;br /&gt;&lt;br /&gt;One that I really like is Hodgson Mill Gluten Free All Natural Brown Rice Pasta Penne (with Golden Milled Flax Seed).  Ingredients:  Brown Rice, Golden Milled Flax Seed.  Verdict:  good flavor, good texture, and overall, I did not notice a difference.  It was very good!  I will be buying this one again!&lt;br /&gt;&lt;br /&gt;I always liked rice noodles at Asian restaurants; but, I had not had any luck trying rice pasta that is supposed to have more of the "tooth" of traditional semolina pasta. I finally bought some (on sale) and it was in my cabinet for more than a couple of months...until this week!&lt;br /&gt;&lt;br /&gt;I was determined to use what I had to prepare our meals this week.  So, out came the quinoa (with a recipe from "Super Natural Cooking" by Heidi Swanson).  After rinsing it thoroughly, it took about 30 minutes to cook, using the following recipe. The results? Deeelicious! My 21 month old loved it, I loved it, my husband loved it and my 4 1/2 year old took more than 2 bites! Woo Hoo! Enjoy!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Quinoa and Crescenza with Sauteed Mushrooms&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Rinse quinoa thoroughly, running under water for about 1 minute, with a fine mesh strainer.&lt;br /&gt;&lt;br /&gt;6 T clarified butter or olive oil&lt;br /&gt;1 clove garlic, minced&lt;br /&gt;1/2 onion, chopped&lt;br /&gt;2 c. quinoa (any variety), rinsed&lt;br /&gt;1 c. good quality white wine (the author noted this could be replaced by a light tasting vegetable broth, which is what I used)&lt;br /&gt;1 t. fine grain sea salt, plus more as needed to taste&lt;br /&gt;2 c. water&lt;br /&gt;2 big pinches of red pepper flakes (I omitted this for my boys)&lt;br /&gt;1 pound mushrooms, sliced 1/4" thick (I had white button mushrooms on hand; but, I am sure that any variety would be delicious)&lt;br /&gt;freshly ground black pepper to taste&lt;br /&gt;3 - 4 oz. Crescenza cheese (the author noted this could be replaced by gruyere, which is what I had on hand to use, or another melting cheese)&lt;br /&gt;&lt;br /&gt;Heat 3 T of the butter or olive oil in a large saucepan over medium-high heat, then add the garlic and onion and saute for 5 minutes or until the onion softens and becomes translucent.  Add the quinoa, wine and 1 t. salt, bring to a boil, and continue boiling for 3-4 minutes, until the liquid has reduced a bit.&lt;br /&gt;&lt;br /&gt;Add the water, return to a boil, then lower the heat, cover, and simmer for about 25 minutes, or until the quinoa opens up, revealing a little spiral, and is soft and pleasant to chew. (I followed this and had to add extra broth and water at the end because it was starting to burn and seemed too dry...I added about 1 1/2 c. more and it was just right...it may have been my pan or the level of heat).&lt;br /&gt;&lt;br /&gt;Meanwhile, melt the remaining butter in a skillet over medium high heat, along with the red pepper flakes and a few pinches of salt.  Stir in the mushrooms and cook without stirring for a few minutes, until they've begun to brown and release their juices.  Then shake the skillet every few minutes until the mushrooms are evenly browned, about 4 more minutes.  Remove from the heat and season with salt and pepper to taste.&lt;br /&gt;&lt;br /&gt;Once the quinoa is perfectly tender yet textured, drain off any excess liquid and stir in the cheese.  Ladle into bowls and top with the mushrooms. I looked through some of the delicious recipes and saw a lot of ingredients I would use.  I wanted to "doctor" a yellow or chocolate cake mix as soon as possible!&lt;br /&gt;&lt;br /&gt;This is written in the past tense because I then went to the store.  To my astonishment, the gluten-free cake mixes (for one cake) where $6-$8/each!  Ummm...no.  I can't pay that much.&lt;br /&gt;&lt;br /&gt;I have, however, taken the gluten out of my family's favorite chocolate cake recipe!  It was delicious on the first try; but, it needs some "doctoring" to get it exactly right. Dangerous!</title><content type='html'>Well, it is a good thing playgrounds are few and far between in Mexico.  Truly, I wish there were a lot more; but, only if they were made safer!&lt;br /&gt;&lt;br /&gt;Picture this:  metal everywhere...metal swings (yes, the seats, too), metal slides (ouch, they had those when I was a kid), metal monkey bars of all shapes and sizes, dangerous (long and sharp) metal see-saws, and much more - metal!&lt;br /&gt;&lt;br /&gt;We chose not to go to the slide and swing set placed about 10 feet from the road and about 5 feet from the river.  Instead we went to the enclosed playground inside the fence of the DIF building (this is the equivalent of a Department of Children and Family Services in the U.S.) with no shade trees (remember, it is all metal).  ahem.  Fun. &lt;br /&gt;&lt;br /&gt;We also went to the beautiful Lake Chapala (the largest lake in Mexico!), next to which is the equivalent of a state park/playground/picnic area.  You pay a small entrance fee to spend the day picnicking and the like.  It was at this location, much to our horror, where my nephew's beautiful daughter was struck in the eye by one of those awful metal swings! It was great, really!  What I was confounded by was why EVERYTHING ("todo" in Spanish) is so expensive in the U.S.! &lt;br /&gt;&lt;br /&gt;In Mexico, almost everything was "hecho en Mexico" (made in Mexico).  If it was not made in Mexico, it was much more expensive (at least double, sometimes more).&lt;br /&gt;&lt;br /&gt;I have not researched this; so, I can only offer my theory as to why U.S. prices are generally "competitive" across the board (with only what seems to me is a slight difference in imported vs. American-made products).  I don't know if there are regulations that guide this phenomenon; but, I don't feel they work effectively.&lt;br /&gt;&lt;br /&gt;My theory is that with "American" companies creating parts and product lines in factories in other countries and vice versa, the lines get blurry.  So, this enables the companies to offer pricing that competes with other products, whether they are made in this country or not. &lt;br /&gt;&lt;br /&gt;What I am thinking is that companies that make products in the U.S. have a bigger profit margin for the products they make that compete with imported products.  I have no proof for this, only my impression based on the "real price" of goods.  I would love to find out exactly why our cost of living is SO MUCH MORE than in Mexico. We made many observations about the culture, lifestyle, food and language.&lt;br /&gt;&lt;br /&gt;We never quite matched their rhythym.  We had to eat when we woke up; we could not wait until the normal 10am breakfast time in their household (after the trip to the "mercado").  We also could not wait until 4pm for lunch nor eat dinner at 9pm (my boys were usually asleep by 8). &lt;br /&gt;&lt;br /&gt;What did we eat?  My oldest did not like the fresh cheeses; so, we went to Wal-Mart (yes, Wal-Mart!) to buy one of his favorite cheeses--non-smoked provolone (and sliced whole wheat bread, whole wheat crackers and a few other staples that are not readily available).&lt;br /&gt;&lt;br /&gt;Eating gluten free was not too difficult.  So many amazing foods are made with corn flour instead of wheat.  I did miss out on the fresh flour tortillas at Los Burritos, though (they melt in your mouth).  But, tamales, gorditas, and more were so, so, so delicious.  As were the FRESHEST fruits and vegetables I have ever had.&lt;br /&gt;&lt;br /&gt;We loved making trips to the market (mercado).  I liked exposing my boys to the differences (and practicing our Spanish).  I look forward to writing more about our experiences. The second week, I bought brown rice flour and a friend gave me some white rice flour.  It is amazing what we can cook without gluten!  The first thing I "re"made was my scones.  Besides needing a little extra moisture and less time in the oven, they were fantastic!  Better than the original recipe!  Hello yummy!&lt;br /&gt;&lt;br /&gt;The second thing I remade was my pancakes, which tasted yummy with 1 c. white rice flour and 1 c. brown rice flour in place of the white wheat flour; but, they stuck more to the pan and were a bit dry.  I plan to attempt my pancakes again with gluten free oat flour, which I purchased this week.&lt;br /&gt;&lt;br /&gt;I have tried eating gluten a couple of times and I notice it in my body almost instantly.  I have more mucous for a couple of days, I sneeze more and I often get pains in my back (gall bladder?) that make it hard for me to breathe.  When I consume gluten-free foods, I do not get those pains.  I also haven't noticed any of the strange symptoms that prompted my doctor to suggest the change in the first place (itchy hands and feet, mild vertigo, etc.).&lt;br /&gt;&lt;br /&gt;Last night, I remade my chocolate chip cookies with oat flour.  They were fantastic!  But, I do have to fiddle with the baking time a bit.&lt;br /&gt;&lt;br /&gt;I think this will work. I was showing a friend some pictures of me with my girlfriends on spring break; and, in the pictures, I was always slouching and leaning down so that I was at the same height as my friends.&lt;br /&gt;&lt;br /&gt;He told me, "Why aren't you standing up straight? You should stand up straight and be who you are."&lt;br /&gt;&lt;br /&gt;For some reason, those simple, yet poignant, words resonated with me in a big way. I have done my best to "stand up straight" ever since. I like who I am.&lt;br /&gt;&lt;br /&gt;There is a lot to be said for dialogue...those all-important conversations when both parties are open and respectful so that it gives each person room to maintain their integrity and "be who they are" and also be open to new ideas and perspectives. Some call it, debating. Sometimes it sounds more like arguing. But, a great debate should make both parties feel good!  We should never feel like we have to suppress important feelings and ideas.&lt;br /&gt;&lt;br /&gt;We have to choose when to remain silent and when to create dialogue. Truthfully, this is something I am still learning to do.  It is really hard.&lt;br /&gt;&lt;br /&gt;I hope to teach my children to "stand up straight and be who they are" in pictures and in life. Just yesterday, I went and bought brown rice flour to attempt to remake some of my favorite recipes that call for wheat flour.&lt;br /&gt;&lt;br /&gt;Until now, I have just been eating what we have. Lots of fruits and vegetables, rice, yogurt, eggs, meat, and potatoes have all been a part of my diet this week. I love grits and I have sought to remake them in different ways.&lt;br /&gt;&lt;br /&gt;I have a favorite recipe that calls for polenta, gorgonzola and mushrooms...yum!&lt;br /&gt;&lt;br /&gt;I also found a recipe that called for chorizo, grits, tomatoes, spinach and corn and it was delicious.&lt;br /&gt;&lt;br /&gt;I can't say I feel different. But, my doctor said that I may not notice until I stop eating gluten for awhile and then eat some and notice if there is a difference. I had no idea something I have been using for YEARS has aluminum in it...which I have been trying to avoid getting into or onto my body in every other way.  Hello?  Why doesn't it have a warning on the package!  Something!  Can someone please fire the FDA and create a new organization.  PLEASE?&lt;br /&gt;&lt;br /&gt;The only reason I discovered this little known fact is because I was reading a cookbook ("Super Natural Cooking") that called for "aluminum free baking powder" in the recipes.  So, I went to look at my baking powder ingredients and sure enough, found aluminum right there... in my baking powder.  It is not listed as an ingredient in my Arm &amp;amp; Hammer Baking Soda; but, they do also sell aluminum free baking SODA...so, it makes me wonder.&lt;br /&gt;&lt;br /&gt;Just thought I would share! Many of the recipes on this site may soon be altered if my gluten-free diet helps with some odd allergy symptoms and fatigue I have been feeling.  My doctor recommended I try a gluten-free diet for one month to see how I do.&lt;br /&gt;&lt;br /&gt;I am on Day 4 of eating gluten-free.  It is actually not too hard.  We have always eaten a lot of fruits and vegetables, brown rice and other healthy, gluten-free foods.  I am discovering wonderful, delicious gluten-free recipes all the time.&lt;br /&gt;&lt;br /&gt;I will soon become more acquainted with quinoa (I still have to buy some) and possibly the likes of amaranth flour, teff and rice flour.&lt;br /&gt;&lt;br /&gt;I still make pasta for my family.  I just eat what I put on the pasta.  I should probably cook up some rice to keep on hand... This is the simplest one and I almost always have all the ingredients!  I only recently started using agave nectar and almond milk; and, this recipe makes these healthier substitutions shine.  I have often altered this recipe with banana puree and other liquids and solids (blueberries) and they always turn out great.  I adopted this recipe from one I found at Cooks.com.&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ruvalcaba's pancakes&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;2 eggs, separated&lt;br /&gt;2 c. sifted white wheat flour&lt;br /&gt;1 T. agave nectar (when using banana puree or sweetened almond milk, I leave out the sugar)&lt;br /&gt;1 t. sea salt&lt;br /&gt;2 c. almond milk (or regular milk)&lt;br /&gt;1/2 c. butter, melted (I prefer unsalted)&lt;br /&gt;1 T. baking powder&lt;br /&gt;&lt;br /&gt;Beat egg yolks.  Add agave nectar.  Sift flour &amp;amp; salt.  Add flour mixture and milk alternately to egg yolks.  Stir in butter.  Beat egg whites until stiff and fold into batter.  Add baking powder last.  This batter keeps well in the fridge.  If it gets too thick, thin it with milk.  Drop onto dry, heated skillet.  We serve with 100% pure maple syrup, applesauce or fruit preserves. I also did not know that almost all (if not all) anti-perspirants (and some deodorants) contain aluminum.  I have NEVER cooked in an aluminum pot because of the possibility of having it leech into my food.  Why, oh why, did I not know I was putting it on my body?&lt;br /&gt;&lt;br /&gt;I hope the difference between an anti-perspirant (keeps you from perspiring/sweating) and a deodorant (conceals the odor of our sweat) is clear. &lt;br /&gt;&lt;br /&gt;We are really interrupting our body's natural functions when we use ANTI-perspirants.  We are supposed to sweat...that is what our glands do.  But, still, I feel like I sweat A LOT (too much information, sorry).  I still use an anti-perspirant...but, I am constantly bothered by the possible harm I could be doing.  So, I recently started trying Tom's of Maine Apricot Deodorant (aluminum-free, of course).  I love the scent; but, it lasts a maximum of three hours before re-application is necessary.  I have yet to use it for a whole day; but, I often use it after I bathe at night.  I am working toward trying it for a whole day (this might be more likely when it is not 95 degrees in the shade).&lt;br /&gt;&lt;br /&gt;I plan to work toward ensuring ALL of my family's personal care products are not harming us. Alas, I have read a lot about what is the best thing to do to keep those bugs (especially mosquitoes!) from biting me and our kids.  Unfortunately, the three of us (my two boys and I...my husband is not as sensitive) have a strong reaction to mosquito bites.  So, anything we can do to keep them away (that won't harm us more), we try to do.&lt;br /&gt;&lt;br /&gt;The bug repellent we have been using for the last two years is made by Repel.  It is an all-natural mix of lemon and eucalyptus oils.  It works!  I never put it on my baby, though!  Now that he is one, we will see how he does.&lt;br /&gt;&lt;br /&gt;Your body chemistry has a lot to do with what will work for you.  Unfortunately, I have not found a lot of choices at mainstream stores.  I buy Repel online. But, at that age, he slept the whole time.&lt;br /&gt;&lt;br /&gt;A couple of weeks ago, we took our now 1-year-old and our 4-year-old on our first "official" road trip. We went to Tennessee to visit some family and the trip took about 12 hours from our home to theirs. Ummm...it was a nice trip...but, what were we thinking?? Overall, a good experience for us all...but, not easy.&lt;br /&gt;&lt;br /&gt;We departed for our trip shortly after lunch (nap time) and the boys slept in the car (but, not for long)...after about 3 hours, we needed to run around. Since it was raining, we stopped at an exit that looked promising...and, we found a mall to run around in and go to the bathroom. When we got back into the car, it was "snack time"...neverending snack time, that is. The boys played for a bit and started getting antsy again. So, we stopped for dinner at a Cracker Barrel. After that, it wasn't long before they both got tired (we also brushed teeth and put on pjs at the restaurant...er, actually in the parking lot because the bathrooms weren't suitably clean). We arrived in Tennessee pretty late and got everyone settled into bed.&lt;br /&gt;&lt;br /&gt;We very much enjoyed spending time with family for three days; and, then it was time to go back home. This time, we left early in the morning (at about 8:30...we had tried to leave earlier) and we were able to stop for a special lunch in Paducah, KY. We went to an amazing bakery, called Kirchoff's...wonderful cranberry walnut bread with chicken salad (no onions!) for me, a cuban sandwich for my husband, a reuben for my sister and the boys had grilled cheese and fresh bread. We saved room for ice cream (as recommended by the lovely lady at the visitors center)...homemade ice cream, that is (peach &amp;amp; banana for me in a homemade waffle cone...chocolate with sprinkles for my son (as always!)....my sister had cookies and cream and I can't remember what flavor my husband had). This ice cream was AWESOME; and, I am embarrassed that I can't remember the name of the place. Paducah was a lovely stop.&lt;br /&gt;&lt;br /&gt;Now, we could've just packed sandwiches and eaten them anywhere along the way; but, food is a very important part of our memories (our sense of smell is somehow connected to our memories...which is why smells invoke memories). So, we often try to tie in some special food memories, especially on "journeys".&lt;br /&gt;&lt;br /&gt;The rest of the way home was taxing (forgive me); but, I would totally do it again. Overall, we eat less of both, switching out almond or soy milk in place of regular milk and beans and seafood in place of meat.  Even though I have noticed that the price of organic flour and organic milk have gone down, my grocery bill has gone up by about $50/month for my family of four.&lt;br /&gt;&lt;br /&gt;Seafood is something I have yet not addressed.  My husband and I love all kinds of seafood, but we live in the Midwest.  We stick to canned tuna (not albacore), wild alaskan salmon (canned and frozen) , tilapia and shrimp.  These types, for the most part, are responsibly caught and/or farmed and flash frozen for the safe trip to my local grocer.&lt;br /&gt;&lt;br /&gt;We have tilled the soil (on friends' land) to begin our garden this year.  We have started some of our seedlings.  We desperately need to plant more...soon!&lt;br /&gt;&lt;br /&gt;We are very much looking forward to the abundance of fresh, local (maybe our own!) produce in the coming months! After watching it, I have to say the movie raised more questions than it answered...in a good way.&lt;br /&gt;&lt;br /&gt;I like to get information first-hand.  So, I will be asking more questions, empowering myself with information to make the best decisions regarding what my family eats. &lt;br /&gt;&lt;br /&gt;I have mentioned that I had a hard time paying the high prices for organic dairy; but, after watching this documentary, I feel I have to do this for my kids and my (future) grandkids.  We will just eat less and find better options.&lt;br /&gt;&lt;br /&gt;Here's the thing:  I already knew that our food supplies were drastically altered even in their "natural" (unprocessed) state.  I knew that the WAY our food is produced (before it is even blended with artificial ingredients and preservatives, etc.) reduces our meat and produce to merely APPEAR to be the same as an organically grown/fed product/animal that has absorbed generations of nutrients and was not, in fact, "bio-engineered".&lt;br /&gt;&lt;br /&gt;I have a problem with something that is supposed to be created in nature being created in a laboratory. &lt;br /&gt;&lt;br /&gt;I sometimes feel like "David" against "Goliath".  What we, the consumers of these tauntingly disdainful products, don't realize is that WE ARE GOLIATH.  We make choices every day that affect (and alter) the decisions of these "big corporations"!  Every time we go to the grocery store, we choose.  We can choose to support an organic operation or a non-organic one.  We are telling people what we want by the choices we make.&lt;br /&gt;&lt;br /&gt;From now on, I will ASK for products I can't find.  I will not settle for what is on the shelves.  From now on, I will buy ONLY organic dairy (my goal is to find a farm nearby).&lt;br /&gt;From now on, I will buy ONLY organic meat (this may be more difficult).&lt;br /&gt;&lt;br /&gt;I will be a responsible consumer.  I will find out where my products are made and if the companies that make them treat their employees and our earth well.  I will ask questions.&lt;br /&gt;&lt;br /&gt;Yes, the prices are higher.  No, I don't have the extra money.  We already eat more vegetables and grains than meat; so, we will find a way to make it work. No, really.  I feel unconditional love for my husband and my sons (and others); but, it is really hard to show it.&lt;br /&gt;&lt;br /&gt;I love deeply and easily.  But, when anger gets in the way, it is especially difficult to show my love.&lt;br /&gt;&lt;br /&gt;This is something I am working on.  I pray for the ability to show my family love, even when I am angry. Pie is amazing.  My mouth is watering just thinking about pie. &lt;br /&gt;&lt;br /&gt;Unless I am making it for a special occasion or a special someone, I usually try to make at least one pie every month or so.  In the spring, my favorite is strawberry rhubarb.  In the summer, when I can find organic peaches, I love peach blueberry pie.  I love apple pie in the fall and apple cranberry pie in the winter (making this one this week).  My recipe for the filling?  Cut fruit, squeeze a lemon when needed, add some flour and sugar (my pies are never very sweet) and put a couple of pats of butter on top before sealing the crust.&lt;br /&gt;&lt;br /&gt;Place these simple ingredients in the right crust and it is easy to make a delicious pie.  The crust recipe I have modified (only slightly) is from Abby Mandel, who wrote the "Weekend Cook" column for the Chicago Tribune (I miss that column AND the recipes).&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Double Pie Crust&lt;/strong&gt;&lt;br /&gt;2 sticks of unsalted butter, cut into Tablespoon size pieces&lt;br /&gt;1 egg&lt;br /&gt;3 Tablespoons cold water&lt;br /&gt;1/8 teaspoon salt&lt;br /&gt;1 1/3 cups all-purpose flour&lt;br /&gt;1 cup whole wheat flour (the original recipe calls for only all-purpose flour)&lt;br /&gt;&lt;br /&gt;1. Place butter, egg, water and salt in food processor.  Pulse on/off until butter is coarsely chopped.  Spoon flour over butter; process until dough is crumbly but not yet in a ball (over-processing will toughen dough).  Transfer crumbled dough to a large plastic food bag; kenad through the bag to compress the dough into a smooth ball.  Cutt off 1/3 of the dough for the top crust; flatten into a disk.  Flatten remaining dough into a disk for the bottom crust.  Wrap disks in plastic wrap; refrigerate at least 1 hour or up to 2 days.  (Can also be frozen up to one month, thaw slowly in refrigerator...I have never tried this).&lt;br /&gt;&lt;br /&gt;2. Let chilled dough rest at room temperature for 10 minutes before rolling.  Roll bottom crust on floured surface into a circle, about 1/8 inch thick.  Gently wrap around rolling pin and unroll into pie pan.  Press dough in place without stretching.  Prick crust closely with a fork.  Trim edges to a 1 inch overhang.&lt;br /&gt;&lt;br /&gt;3.  Put in your favorite filling (see above for mine).&lt;br /&gt;&lt;br /&gt;4.  Roll out smaller pastry piece on floured board into a circle to cover pie.  Wrap around rolling pin and unroll onto fruit.  Trim edges if needed.  Fold edges of crust under and press to seal together.  Make a decorative edge.  Cut decorative air vents.  Place pie pan on baking sheet (to catch spills).&lt;br /&gt;&lt;br /&gt;5.  Bake 10 minutes in a preheated 450 degree oven, then decrease temperature to 350 degress for the remaining cook time (approx, 45-50 minutes, depending on how you like your crust).  Cool at least 2 hours before serving. &lt;br /&gt;&lt;br /&gt;Voila!  Easy pie.  Delicious. First, we try to avoid "the dirty dozen" (the fruits and vegetables that absorb the most chemical pesticides). When we don't have access to organic foods or if they are too expensive, experts advise to at least try to find organic alternatives to the "dirty dozen" (the first 12 on the list found at &lt;a href="http://www.foodnews.org/fulllist.php"&gt;http://www.foodnews.org/fulllist.php&lt;/a&gt;).&lt;br /&gt;&lt;br /&gt;I have to buy organic peaches. For a few years now, I have discovered that when I eat non-organic peaches, my lips get red, itchy and swollen. I really don't want to know what they might be doing to my insides. The same thing happens when I eat non-organic apples, but to a slightly lesser degree. We eat a lot of apples in our house; so, we always try to buy organic apples, applesauce and apple juice.&lt;br /&gt;&lt;br /&gt;We buy organic carrots and celery because they are readily available nearby and they aren't much more expensive than non-organic alternatives. I wish it were easier to find fresh organic berries because we love berries.&lt;br /&gt;&lt;br /&gt;We always try to buy organic lettuces, as well.&lt;br /&gt;&lt;br /&gt;We buy organic peanut butter (we like Smuckers natural). It has been proven that peanuts absorb a very high level of pesticides.&lt;br /&gt;&lt;br /&gt;We have a great resource for organic free-range eggs. We also have a friend who raises cows (we will have to get a larger freezer!).&lt;br /&gt;&lt;br /&gt;We feel like we eat a lot of dairy and need to buy more than just organic yogurt. It is so difficult to justify the cost of a gallon of organic milk (and, for some reason, I am sensitive to ultra-pasterized dairy). In college, I started out doing random poses I had pulled out of a magazine.  I really enjoyed the stretch and the challenge of each pose. &lt;br /&gt;&lt;br /&gt;But, it wasn't until a couple of years ago when I started practicing at a local studio that I really understood the power of the mind, body (and spirit!) connection.  After a 90 minute "energy yoga" class, I feel relaxed, rejuvenated, strong and exhilirated!  I love that feeling!&lt;br /&gt;&lt;br /&gt;I recently told someone practicing yoga made me feel like I had gotten a massage...and, I got to burn calories!  It really does! &lt;br /&gt;&lt;br /&gt;There are many things I love about yoga.  But, one other thing is that I can practice yoga my whole life.  There will never (hopefully) be a time when I will have gotten too old. One of the most toxic household cleaners is chlorine bleach. When I would clean our bathroom, I would often have the smell of chlorine in my nose for hours. I am proud to say our home has been chlorine free for over a year. We now use white vinegar, hot water and tea tree oil to disinfect our home, our laundry and more, VERY effectively (MORE effectively, in fact).&lt;br /&gt;&lt;br /&gt;Have you ever tried using baking soda to clean your bathtub? Baking soda is good for a lot of things; but, a paste of baking soda and water is THE BEST cleanser for your bathtub. We have an older tub in our old home and it is very difficult to clean. Very difficult. We have tried a slew of various cleansers promising to clean our grime...to no avail...until we used baking soda paste...works every time.&lt;br /&gt;&lt;br /&gt;The bonus now, is that my 3-year-old can help me clean the bathroom, safely! (He has only wanted to help me once; but, I do cherish that one time!)&lt;br /&gt;&lt;br /&gt;So, I hope I have provided more than two reasons here. Well, I was wrong. After awhile, my son added another syllable and I became, "mama". Not long after that, I was, in fact, "mommy".&lt;br /&gt;&lt;br /&gt;Now that he is three-and-a-half, I have for some reason again become, "mama". He still calls me "mommy" sometimes; but, more often than not,he addresses me as, "mama".&lt;br /&gt;&lt;br /&gt;I have mixed feelings about the day that I will again become, "mom". On one hand, I am so proud of my growing boy. On the other hand, he is growing up and I have to remember to treasure every moment.&lt;br /&gt;&lt;br /&gt;My five-month-old has begun muttering, "mah-mah-mah-mah". Not literally, of course.  But, I watched my fair share of television and I know at least a little about all of the shows that have aired in the last 30-some years.  I like my television.  So, it was a very difficult decision to first cut back to the basic channels (a couple of years ago) and then to make the decision to disconnect cable television all together.&lt;br /&gt;&lt;br /&gt;With the digital revolution, there really is no such thing as "free TV" anymore; so, we just watch videos and we have found some good websites from which we can watch some of our favorite shows on the internet (the original networks on which the shows air have the best quality; but, &lt;a href="http://www.hulu.com/"&gt;www.hulu.com&lt;/a&gt; has a good collection of shows and movies available to view for free).  My husband only misses sporting events.  Otherwise, we have come to really like this arrangement.&lt;br /&gt;&lt;br /&gt;First of all, we are saving $40/month.  I have never paid so much for basic cable. &lt;br /&gt;&lt;br /&gt;Second, we watch select programs when it is convenient for us; so, we do not have to abide by the television networks' schedules.  But, we do have to abide by our childrens' schedules!&lt;br /&gt;&lt;br /&gt;Third, we are watching a whole lot less TV.  This has been lovely.  As a family, we are better tuned in to each other (instead of the television).&lt;br /&gt;&lt;br /&gt;So, it is with glad tidings that we bid adieu to PBS (my ultimate fave), HGTV (second runner up), Food Network (close third) and all the rest.  If you are worth watching, we will find you. My three-year-old got on his tricycle and off we went!  We went down Main Street, down the hill and up again to the bridge.  When we got to the top of the hill before the bridge (phew!), my son decided he wanted to turn around and go back down.  We did this a total of nine times.  I helped him on the way up each time because I loved watching him sail down the hill with glee!  I let him decide when he had had enough.  Oh, the joy!&lt;br /&gt;&lt;br /&gt;And, what a beautiful and truthful metaphor for life.  It is hard to go uphill; but, it sure is worth the effort! The thing is, there is so much information supporting both sides of the argument on whether or not to vaccinate...and, both sides are argued so passionately.&lt;br /&gt;&lt;br /&gt;My first child has shown no signs of having an adverse reaction to his shots and for that I am grateful.  Even though I have read about the mercury (no longer used) and formaldehyde (it is supposed to be in such small quantities, it is similar to a naturally occuring substance already in our bodies) present in the vaccines, I am most concerned about introducing so many things at once to my baby's sensitive system (and, he is very sensitive...skin, tummy, you name it).&lt;br /&gt;&lt;br /&gt;I am also concerned about him interacting with our family that travels out of the country regularly (and, also when we travel ourselves when he gets a little older, for his possible direct exposure to infectious diseases).  His doctor said that the things that are currently most dangerous are typhoid fever and hepatitis A; but, he is still too young (4 months) to be innoculated against these two things anyway.&lt;br /&gt;&lt;br /&gt;We went ahead with his 2 month shots, after much debate and question; but, we had waited to get his hepatitis B shot until that time and we skipped the flu shot.  I don't like vaccinating against the flu because I believe that in doing so, we will create a much more dangerous strain.   It is for the same reason we don't use anti-bacterial everything...a few germs are good and they enable us to build natural antibodies to be better able to fight off other sicknesses.&lt;br /&gt;&lt;br /&gt;We have decided to hold off on his future shots until he is old enough and has enough blood volume to be tested for antibodies that already exist in his body (he is a breastfed baby, after all) to see if we really need all of them.  At that time, we will decide what schedule works for him so that he does not get too many shots at once. He also has a way of bringing to light information that helps everything make sense. For instance, I often complain about our country's antiquated rail transportation system (especially compared to Europe and Asia); so, he told me that after the war, the U.S. dedicated their efforts toward building superhighways because America was going to be the "land of the automobile". While that is, in fact, what America has become; it doesn't make sense to me that our country has not chosen to advance and therefore diversify our transportation options.&lt;br /&gt;&lt;br /&gt;So, I am delighted to read about a recent push in regard to rail technology in America. Rail is the least expensive transportation method to maintain; and, the high-speed electric rail cars that are already in use elsewhere have zero emissions--a vast difference from traditional automobiles and airplanes. If only we could go around the world on trains!&lt;br /&gt;&lt;br /&gt;I look forward to the day when rail transportation in the U.S. is easier and faster (i.e. better) because I believe it will revolutionize the way we think about transportation and the overall effect on the environment. Thanks to a friend who asked for the recipe...here it is!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;1 dried ancho chile (can be found almost anywhere, especially at a Mexican grocery store)&lt;br /&gt;1/2 c. boiling water&lt;br /&gt;2 T. olive oil&lt;br /&gt;3 boneless, skinless chicken thighs&lt;br /&gt;Kosher salt and freshly ground black pepper, to taste&lt;br /&gt;1 large onion (I use half), diced&lt;br /&gt;2 carrots, peeled and sliced into 1/2 inch coins&lt;br /&gt;2 stalks celery, cut into 1/2 inch slices&lt;br /&gt;3 garlic cloves, peeled and quartered&lt;br /&gt;2 t. ground cumin&lt;br /&gt;6 c. chicken broth&lt;br /&gt;6-8 roma tomatoes, diced (or 2-14.5 oz. cans chopped tomatoes)&lt;br /&gt;1/2 c. loosely packed cilantro leaves&lt;br /&gt;6 corn tortillas (I use white corn tortillas)&lt;br /&gt;Vegetable or canola oil, for frying&lt;br /&gt;&lt;br /&gt;For garnish (all optional): Sliced avocado, crumbled queso fresco, sour cream, salsa, lime, and/or cilantro, crispy tortilla strips (made by frying sliced tortillas)&lt;br /&gt;&lt;br /&gt;Place chile in bowl, pour boiling water over and let soak 30 minutes. Drain, remove stem and seeds. Slice into 1/2 inch strips and set aside.&lt;br /&gt;&lt;br /&gt;In a heavy Dutch oven or soup pot, heat olive oil over medium high heat. Add chicken; season with salt and pepper. Brown on both sides, about 10 minutes total. Add onion, carrots and celery. Continue to cook about 8 minutes, stirring often. Add garlic and cumin and cook an additional 2 minutes. Add broth, reserved chile, tomatoes and cilantro and bring to a boil. Reduce heat and simmer about 15 minutes. Tear 3 tortillas into strips and add to soup. Continue to simmer about 15 more minutes.&lt;br /&gt;&lt;br /&gt;With a slotted spoon, remove chicken to a cutting board. Remove soup from heat and puree with an immersion blender (or in small batches in a food processor). With two forks, shred chicken and return to pureed soup. I love some granola with my yogurt &amp;amp; berries or just with milk...great any time of year and posted here by request!  I make lots of different varieties with nuts and dried fruit and sometimes without cinnamon; but, this one is my favorite.&lt;br /&gt;&lt;br /&gt;2 1/2 c. rolled oats&lt;br /&gt;1 c. coconut&lt;br /&gt;1/3 c. sunflower seeds&lt;br /&gt;1/2 c. toasted wheat germ&lt;br /&gt;1/2 c. flaxseed meal&lt;br /&gt;1/4 c. butter&lt;br /&gt;1/4 c. packed brown sugar&lt;br /&gt;1/4 c. honey&lt;br /&gt;1 1/2 t. vanilla&lt;br /&gt;1 t. cinnamon&lt;br /&gt;1 c. sliced almonds (or more!)&lt;br /&gt;1 c. dried cranberries&lt;br /&gt;&lt;br /&gt;Preheat oven to 300 degree F.  Lightly butter the inside of a large roasting pan.  Add oatmeal, coconut, sunflower seeds, wheat germ and flaxseed meal.  Spread evenly.  Bake for 20-45 minutes (original recipe says 20 minutes...I always toast it longer!), stirring often.&lt;br /&gt;&lt;br /&gt;In small saucepan, mix butter, brown sugar and honey.  Stir occasionally over medium heat until mixture is combined.  Remove from heat.  Add vanilla and cinnamon.&lt;br /&gt;&lt;br /&gt;Remove roasting pan from oven.  Turn up the heat to 350 degrees F.  Pour warm brown sugar mixture over oatmeal mixture and stir thoroughly with a fork.  Bake for 1o minutes more.&lt;br /&gt;&lt;br /&gt;Remove from oven and stir in cranberries and almonds.  Firmly press granola mixture into pan, making an even layer.  Bake for 10 minutes more or until golden brown.  Remove pan from oven and place on cooling rack.  Remove granola with a spatula and place on foil to cool completely.&lt;br /&gt;&lt;br /&gt;Store in an airtight container. I love that my 3 year old has learned to ride a tricycle and races along on the sidewalk and just beams with pride when he looks up as he passes me. His happiness shows more when he is proud of himself.&lt;br /&gt;&lt;br /&gt;Of course, we are still working through the agony and frustration (and tantrums) that occur while we are learning new skills. This is a new skill in and of itself--to control our emotions. I have come to find this is a skill I am still learning as well. But, when we are both able to remain calm, we take time to recognize that and take pride in that moment.&lt;br /&gt;&lt;br /&gt;My 3 month old is a charmer and learning to communicate his needs with sounds other than crying. He is visibly proud when he is able to control his hands enough to reach out and touch his toy to make a noise. I love this. But, I am also a realist.  I take delight in focusing on the good things; but, it does not mean I do not see the bad things.&lt;br /&gt;&lt;br /&gt;Doing what I do--reading, observing, experiencing--I have sensed a renaissance of sorts coming upon us.  In fact, it has already begun.  I feel like people are more "in tune"--to themselves, their families, nature.  I feel like more people are paying attention.  I feel like more people are taking responsibility for their lives.  I feel like no one can stop it.&lt;br /&gt;&lt;br /&gt;There are many factors that have enabled this "perfect storm".  For one, the media bonanza about all things "green" in the last few years has placed a microscope over our everyday tasks.  Thank goodness!  It was about time!  I love learning new ways to be "green"...which, to me means being more frugal, reusing more, and, becoming more aware of where things come from and where they go.&lt;br /&gt;&lt;br /&gt;Another recent development is the downturn in the economy.  This has forced us to focus on what is most important to us and pay attention to how we spend our money.  This has forced us to make smarter and more informed choices (hopefully).&lt;br /&gt;&lt;br /&gt;Besides these things, based solely on observation, I have noticed that the "lost" generation is now "found."  And, the next generation is smarter and more worldly than I will ever be (thanks to the internet).&lt;br /&gt;&lt;br /&gt;I look forward to embracing this renaissance.  I want to continue to pare down and live a simpler life with my husband and sons.  I enjoy focusing on what is most important. &lt;br /&gt;&lt;br /&gt;I want to leave this world a little better than I found it for the sake of our children and grandchildren . If you couldn't think of another reason to put cut flowers in a vase in your home, grow flowers or vegetables in a garden, go for a walk outside, or any of the many other things you can do with and in nature, then just do it to relax!&lt;br /&gt;&lt;br /&gt;Everyone in my family loves the outdoors.  We sometimes just sit on the front porch (or fall asleep there) and listen to the trees and the birds and feel the wind blow us the sweet and earthy smells of nature.&lt;br /&gt;&lt;br /&gt;I love watching our oldest son explore our world--all the bugs, rocks, trees, animals and birds that he discovers on our walks.  Now that he can better describe and remember the places we go, I can see and appreciate our wonderful world even more through his eyes and words.&lt;br /&gt;&lt;br /&gt;We should be so grateful that we live among such beauty. But, I still LOVE zucchini!  Enjoy this in-season vegetable on the grill, roasted in the oven (with some garden fresh tomatoes, too!) or in this quickbread. &lt;br /&gt;&lt;br /&gt;I altered a Betty Crocker recipe for this one.  I often make 3 or more breads at a time…because one cup of zucchini is like 1/3 of a medium large zucchini.  I LOVE this bread and it always turns out well…no matter what I substitute…except the sugar (but, I have been known to lessen the amount to ½ or ¾ cups)…the reason it stays moist is because the sugar brings out the juices in the zucchini.  I LOVE the lemon zest in here…but, it is optional as are the chocolate chips I add for the kiddies (and me!).  This bread freezes very well!&lt;br /&gt;&lt;br /&gt;½ c. butter (I sometimes use canola oil)&lt;br /&gt;1 c. sugar&lt;br /&gt;1 c. shredded, unpeeled zucchini&lt;br /&gt;1 egg&lt;br /&gt;¼ t. finely shredded lemon peel&lt;br /&gt;½ c. whole wheat flour*&lt;br /&gt;¼ c. flax seed meal*&lt;br /&gt;¼ c. wheat germ*&lt;br /&gt;½ c. all purpose flour*&lt;br /&gt;1 t. ground cinnamon&lt;br /&gt;½ t. baking soda&lt;br /&gt;¼ t. baking powder&lt;br /&gt;¼ t. salt&lt;br /&gt;¼ t. ground nutmeg&lt;br /&gt;&lt;br /&gt;*I vary these amounts based on what I have and how much I am making…always to equal 1 ½ cups.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Preheat oven to 350 degrees.  Grease bottom and half inch up sides of loaf pan/s (works just as well in an 8x8, too…but, I shorten the cooking time).&lt;br /&gt;&lt;br /&gt;In a medium bowl, combine flours, flax seed meal, wheat germ, baking soda, salt, baking powder , nutmeg and cinnamon; set aside.&lt;br /&gt;&lt;br /&gt;In another medium bowl, combine zucchini and butter, then add sugar and lemon peel and egg.  Combine with dry ingredients.  Stir until moistened.&lt;br /&gt;&lt;br /&gt;Spoon batter into prepared pan/s.  Bake 55-60 minutes (depends on your pan and your oven) until toothpick comes out clean.  Cool in pans on wire rack for 10 minutes. So, I use Charlie's Soap, &lt;a href="http://www.charliesoap.com/"&gt;http://www.charliesoap.com/&lt;/a&gt; (at the recommendation of my friends and many cloth diaper websites). Because there is no residue, you DON'T NEED fabric softener in the washer or the dryer (leaving more residue to "soften" what was left of the detergent).  I honestly did not know that many other detergents leave a residue.  Without the need for fabric softener, there is less to buy.&lt;br /&gt;&lt;br /&gt;With two young kids and my growing knowledge of all things green, we have begun using a more natural shampoo (98.6% natural ingredients).  The first time I used it, it left my hair so soft, I DID NOT NEED conditioner.  Hmmm...  I tried it again on another day, same thing.  My hair had body and was not left limp with the apparent residue intended to be covered (?) by conditioner.  So, now, we can soon stop buying fabric softener and conditioner (after we use up what we have...I really don't like to waste!).&lt;br /&gt;&lt;br /&gt;Oddly, these things got me thinking about WHY we are buying ever more stuff...and why we think we NEED it all.  Mind you, I am not a conspiracy theorist; but, I can't stop thinking about this. &lt;br /&gt;&lt;br /&gt;I believe some things were invented to be able to produce enough to have enough jobs for our growing population.  I believe it got out of control (when things seemed to be "working" in the gluttenous '80s and people wanted it to continue) and now the "system" is pulling back the reins.  I believe there will be new jobs created for things we KNOW we NEED right now instead of producing things we THINK we WANT. &lt;br /&gt;&lt;br /&gt;We need better infrastructure in this country and people to build it...not just our roads and bridges and railways (we are so far behind!); but, also our homes.  Homes should be built to last centuries not decades...!  I definitely don't have all the answers. It is used mostly in reference to technology (i.e. electronics, cell phones, computers, etc); but, most recently it was used in reference to CARS.&lt;br /&gt;&lt;br /&gt;The question to readers in my Sunday newspaper was, "Do you think they make cars last too long?"  What?!?  I believe everything should be MADE TO LAST!&lt;br /&gt;&lt;br /&gt;We just sold one of our 17-year-old cars because we needed a bigger one to be able to hold the kids and grandpa; and, admittedly, it wasn't working as well anymore (but, it still had a few good years left with proper care and maintenance).  We still have our OTHER 17-year-old car; but, it needs a little bodywork.  Every time we have taken it to a mechanic, they have asked us to let them know when we sell it (because it has such a well-made engine).  I hope it has some mileage left (don't we all?).&lt;br /&gt;&lt;br /&gt;BUT, someone out there is saying that we need to be MORE WASTEFUL (with our money and the accumulation of WASTE) to support the consumerism that has consumed our nation. &lt;br /&gt;&lt;br /&gt;I never knew that things were not intended to last.  I understand the advancements in technology (blah, blah); but, I question the fact that any of these things are making anyone's life any EASIER.  I would guess that these things are making our lives harder because the NEED has been created.  These things that should just be luxuries for those that can afford them have become NEEDS for everyone (right down to our kids...especially our kids!). &lt;br /&gt;&lt;br /&gt;Where did this come from? I am not an expert on nutrition.  I just trust in what I know and have read a lot on the subject of our health, especially as it relates to food. &lt;br /&gt;&lt;br /&gt;I have a love of periodicals...and, I am not a "skimmer".  I read magazines and newspapers cover to cover.  I have read "Readers Digest" at least since the age of 11 and "Self" magazine was a favorite as I got older; now, I am a big fan of "Real Simple", "body &amp;amp; soul" (and many more!) and I never miss reading the Sunday "Chicago Tribune".  A lot has been written about the subject of food.  Ah, yes...I have also read books on the subject.&lt;br /&gt;&lt;br /&gt;I laughed when "experts" advised to eat margarine.  And again when they said not to eat eggs.  And again when they said they were wrong about eggs.&lt;br /&gt;&lt;br /&gt;I hate margarine.  Have never eaten it by choice.  "New studies show" that hydrogenated anything is probably not good for our bodies.  Eggs, however, require NO processing and are as close to nature as they come.  I have never stopped eating eggs (and, I hope I never have to!)&lt;br /&gt;&lt;br /&gt;I personally prefer to eat foods as close to their natural state as possible (i.e. fresh vegetables and fruit, especially those grown organically and foods made with little, if any, preservatives).  I was raised on "homemade" recipes (thanks, mom and grandma!) and I love, love, love to make things from scratch with the freshest possible ingredients!  My family does not eat a lot of fattening foods; but, I do use real butter and real cream when I cook...because these foods are closer to their natural state and have no additives and require less processing.&lt;br /&gt;&lt;br /&gt;I would like to note that I respect and (sometimes) appreciate other people's choices regarding food.  I am just sharing my own.&lt;br /&gt;&lt;br /&gt;Honestly, I did not always pay attention to my food...I just ate what I liked...until I became more aware of my body in general (a bit healthier after the college years) and found out I was allergic to onions (causes a stomach ache and sometimes hives) and I have an intolerance for MSG (causes stomach ache and often, severe headaches) and mono and di-glycerides (something new they started adding to foods like bread and ice cream recently that causes stomach aches and a dizzy feeling).  So, now I read ingredient labels...all the time!  It is crazy what they put into food.&lt;br /&gt;&lt;br /&gt;Did you know some cereals have Tri-Sodium Phosphate (TSP) in them?  My dad owned a cleaning business and he used TSP to clean walls (still remember what the box looked like!).&lt;br /&gt;&lt;br /&gt;Just one more thing for now...  Processed food has the ability to TRICK our bodies...trick them into thinking they are not yet full...and lots of other interesting things...!  I know for a fact that MSG (which is in a LOT of food, by the way...check your salad dressing, chips and crackers!) is a chemical salt that is intended to enhance the flavor of food but has the added benefit of making you want more!  Ugh!  Don't even get me started on the woes of High Fructose Corn Syrup (which I can't eat either, by the way).&lt;br /&gt;&lt;br /&gt;The neat thing is, the less you eat processed food, the more you notice the difference when you do...hence, my intolerance of certain preservatives and additives. Disposable Diapers</title><content type='html'>I researched both options (cloth and disposable diapers) before I had my first son and I feel slightly more informed since the birth of my second son, partly because there is more information available and partly because I know where to look (and know more people to ask). I have gleaned information from knowledgeable friends, periodicals, books and the internet (just plug the title of this blog into any search engine). I honestly feel like this is still a conundrum for me.&lt;br /&gt;&lt;br /&gt;One of the biggest issues I have with disposable diapers is the contribution to landfill waste. So, I looked into using cloth diapers because my feeling is that reusable items are generally better for the environment. Before the birth of my first son, I tried to find a diaper service. Finding none, I started buying disposable diapers. I did not know there were so many other options to which I have been recently introduced.&lt;br /&gt;&lt;br /&gt;What I have also learned is how harmful (to our babies and the environment) the chemicals used to manufacture disposable diapers can be. So, I have committed to trying cloth diapers. They are an investment (per se); so, we are buying a few at a time.&lt;br /&gt;&lt;br /&gt;What concerns me also is the fact that because I have to wash these cloth diapers, first to rinse them off and then in the washing machine, I am using more water and detergent. And, the factor that pushes it over the edge is the use of my gas dryer to dry them (studies have shown that unless cloth diapers are line-dried in the sun 100% of the time, they are in fact more harmful to the environment because of the use of electricity and gas). I also don't like using so much water. But, I want to make sure what I put on my baby is clean and sanitized.&lt;br /&gt;&lt;br /&gt;I like that I am in control of how clean the cloth diapers are. I like that the ones I chose (&lt;a href="http://www.fuzzibunz.com/"&gt;http://www.fuzzibunz.com/&lt;/a&gt;) are made in the USA. I like that I know what detergents (i.e. chemicals) are used on them.&lt;br /&gt;&lt;br /&gt;OK...then, we have disposable diapers again...I found a product that wraps into a reusable cover(&lt;a href="http://www.gdiapers.com/"&gt;http://www.gdiapers.com/&lt;/a&gt;) but, when you toss it out it biodegrades in something like 96 hours (as opposed to something like 300 years for typical disposable diapers). This only works if you keep a compost bin. Because, after researching how landfills work (they are kept as dry as possible) it would likely not biodegrade as quickly in a typical landfill (there are some that are better/"greener" than others). These may be worth trying...I will look into the expense.&lt;br /&gt;&lt;br /&gt;It is difficult to get away from using plastic (i.e. petroleum-based products) as far as diapering your child goes. The cloth diapers I chose are made with microfiber fleece and a soft waterproof exterior and have plastic snaps. There are wool diapers out there; but, I have not seen them or tried them...only heard about them...&lt;br /&gt;&lt;br /&gt;I was also hoping to save money using cloth diapers. We will have to see. My son is only three weeks old.&lt;br /&gt;&lt;br /&gt;We are currently using a mix of disposables and cloth diapers. Since strawberries are in season right now, I thought I would share one of my family's favorite quickbread recipes.  I altered a recipe I found at allrecipes.com!  Enjoy!&lt;br /&gt;&lt;br /&gt;INGREDIENTS&lt;br /&gt;2 cups fresh strawberries&lt;br /&gt;1 1/8 cups all-purpose flour&lt;br /&gt;1  1/2 cups wheat flour&lt;br /&gt;1/4 cup flax seed meal&lt;br /&gt;1/4 cup wheat germ&lt;br /&gt;1 cup sugar&lt;br /&gt;1 tablespoon ground cinnamon&lt;br /&gt;1 teaspoon salt&lt;br /&gt;1 teaspoon baking soda&lt;br /&gt;1 1/4 cups canola oil&lt;br /&gt;4 eggs, beaten&lt;br /&gt;1 1/4 cups chopped pecans (optional, my son does not like nuts in his bread)&lt;br /&gt;&lt;a id="ctl00_CenterColumnPlaceHolder_RecipeToolsControl_lnkSaveToRecipeBoxIcon" style="BORDER-TOP-WIDTH: 0px; BORDER-LEFT-WIDTH: 0px; BORDER-BOTTOM-WIDTH: 0px; BORDER-RIGHT-WIDTH: 0px" href="http://allrecipes.com/Recipe/Strawberry-Bread/SaveToRecipeBox.ashx" rel="nofollow"&gt;&lt;/a&gt;&lt;br /&gt;DIRECTIONS&lt;br /&gt;Preheat oven to 350 degrees F (175 degrees C). Butter and flour two 9 x 5 inch loaf pans.&lt;br /&gt;Slice strawberries, and place in medium-sized bowl. Sprinkle lightly with sugar, and set aside while preparing bread mixture.&lt;br /&gt;Combine flour, sugar, cinnamon, salt and baking soda in large bowl: mix well. Blend oil and eggs into strawberries. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened. Stir in pecans. Divide batter into pans.&lt;br /&gt;Bake for 45 to 50 minutes, or until tester inserted comes out clean. Let cool in pans on wire rack for 10 minutes. Challenging. Embraceable. Warm. Loving. Remarkable.&lt;br /&gt;&lt;br /&gt;We are content, beginning this transition with a "staycation".  It is wonderful to have our own pace to our days...&lt;br /&gt;&lt;br /&gt;In brief snippets, I notice the beautiful colors of spring...the "limey" green of the new leaves, the deep, bright colors of tulips and daffodils...&lt;br /&gt;&lt;br /&gt;I love all the smells, too...freshly mown grass, the wet, earthy air...&lt;br /&gt;&lt;br /&gt;And, the sounds...birds always singing...&lt;br /&gt;&lt;br /&gt;Our first son was born in March. Our second son was born in May. Spring is a beautiful, bountiful, joyous time of year. We learned some things from our parents (they did the best they could); but, most of what we know now was learned by trial and error. We have made a lot of mistakes!&lt;br /&gt;&lt;br /&gt;I am fortunate that I learned how to get the best quality for the lowest price. Shop around. Ask questions. Do your homework. I am good at this.&lt;br /&gt;&lt;br /&gt;I know which stores carry good quality at low prices. I remember the prices for things I buy regularly; and, when I can, I wait to stock up when things are on sale. I clip coupons and read ingredients (very important). There are a lot of resources out there to save money on the things we do buy!&lt;br /&gt;&lt;br /&gt;Being "green", I also love garage sales and scoping out the best resale shops!&lt;br /&gt;&lt;br /&gt;But, what I have often forgotten to ask myself is, "Do I really need this?" I have the money, yes. I am getting the best quality for the best price, yes. But, do I really need it?&lt;br /&gt;&lt;br /&gt;Instant gratification. Sounds satisfying, doesn't it? Only, it isn't. Unfortunately, we both watched our parents spend everything they had. It hasn't been long...just a little over a month...and, I have noticed differences in myself and my son (good ones!).&lt;br /&gt;&lt;br /&gt;After I had my son, I wanted so much to be with him as much as possible; but, I was torn between him and my job for three years. I was fortunate to be able to stay with him three and a half days a week and go to the office three and a half days. At first, I worked at home for a day and a half; and, after two years, I cut my hours by about the same.&lt;br /&gt;&lt;br /&gt;It was satisfying to feel like I had it "all" for a short while; but, the yearning to be there for my son full-time became unbelievably strong. With another child on the way, I knew it was time.&lt;br /&gt;&lt;br /&gt;Many of our friends and acquaintances were surprised at my decision. Often, people give me a look of disbelief when I tell them that I am much busier now than when I was working.&lt;br /&gt;&lt;br /&gt;I feel so fortunate.&lt;br /&gt;&lt;br /&gt;I've got to say, this is the hardest (mentally and physically) and most rewarding job you will never find in the "want ads". It is in my nature to strive to do the best I can, always. A few years ago, I pictured myself as a "working mom". I am so grateful to be a stay-at-home mom. I will have to check out Carl Honore's books, “The Power of Slow: Finding Balance and Fulfillment Beyond the Cult of Speed,” and, more recently, “Under Pressure: Rescuing Our Children from the Culture of Hyper-Parenting." I found his books referenced in an article written by Lisa Belkin, for the NY Times (&lt;a href="http://parenting.blogs.nytimes.com/2009/04/08/what-is-slow-parenting/"&gt;http://parenting.blogs.nytimes.com/2009/04/08/what-is-slow-parenting/&lt;/a&gt;).&lt;br /&gt;&lt;br /&gt;In the same article, Honore defines his concept that has been coined, "slow parenting":&lt;br /&gt;&lt;br /&gt;"“Slow” in this context does not mean doing everything at a snail’s pace. It means doing everything at the right speed. That implies quality over quantity; real and meaningful human connections; being present and in the moment.&lt;br /&gt;&lt;br /&gt;To me, Slow parenting is about bringing balance into the home. Children need to strive and struggle and stretch themselves, but that does not mean childhood should be a race. Slow parents give their children plenty of time and space to explore the world on their own terms. They keep the family schedule under control so that everyone has enough downtime to rest, reflect and just hang out together. They accept that bending over backwards to give children the best of everything may not always be the best policy. Slow parenting means allowing our children to work out who they are rather than what we want them to be.&lt;br /&gt;&lt;br /&gt;Slow parents understand that childrearing should not be a cross between a competitive sport and product-development. It is not a project; it’s a journey. Slow parenting is about giving kids lots of love and attention with no conditions attached."&lt;br /&gt;&lt;br /&gt;My husband and I decided a long time ago that we wanted our lives (and our children's lives) to be a collection of experiences, as opposed to material things. In changing our focus from "keeping up with the Joneses" to "setting our own pace", we have been better able to appreciate the little things and live more fully in each moment. This too makes us more conscious of our actions on the surrounding environment, be it a park, a home, other people, etc... Everything we do and say has an impact on everyone and everything around us. We just need to pay attention.&lt;br /&gt;&lt;br /&gt;It seems like we may have already begun, "slow parenting." We will strive to do the best we can and enable our son (and soon our other child) to discover the world and themselves at their own pace.
